Zucchini towers

I usually go to the market at lunch break since I don’t have time to shop for fresh vegetables and fruit in the morning (I am also too lazy to get up early!!!). Looking for some interesting ingredients for tonight’s dinner, I found some beautiful round zucchinis, my main ingredient for my appetizer. I also bought some yellow peppers and cherry tomatoes.
Let’s see what I came up with…
I start with 2 round zucchinis.
1 cup diced yellow pepper.
1 cup diced cherry tomatoes.
fresh parsley and basil.
fresh spreadable cheese. I used yogurt stracchino, but you can use any soft cheese of your preference.
Cut each of the two zucchinis crosswise into 6 slices.
Grill the slices in batches of for over medium high heat for about 4-5 minutes or until done. Add salt and pepper to taste.
Sautee diced yellow pepper on a skillet over medium-low heat for about 5-6 minutes or until soft and golden. Add salt and pepper to taste.
Combine tomatoes with chopped basil, olive oil, and salt and pepper to taste.
Combine soft cheese with chopped parsley.
And now we are ready to arrange the zucchini towers!
Place one zucchini slice on a plate, put the cheese spread on top of the zucchini, arrange tomatoes and basil mixture, and yellow pepper on top.
Continue layers by placing another zucchini on top.
Repeat with layers of cheese and veggies.
Finish by placing on top the third zucchini layer and this time arrange on top only the vegetables.
Place a basil leaf on top.
Final touch!!
Drizzle with olive oil, sprinkle chopped parsley, and add pieces of remaining tomatoes, and yellow peppers.
Serves 4.

I didn’t think of slicing and stacking the round zucchini. Tasteful.
Usually you stuff round zucchini, but I thought slicing and stacking was fun and different!!
